A Traditional Belizean Breakfast — Johnny Cake

Growing up, I was always excited when my great-grandma whipped up any Belizean dish. It brought me closer to my heritage, and it was delicious. 

One of my favorite dishes was Johnny Cake because it could be eaten a lot of different ways. Usually I like to add cheese and butter to it, but it can easily be made sweet with marmalade or any topping of your choice. 

Belizean cuisine is inspired by many different regions including Britain, the Carribean and Mexico and there are many English traditions that are still prevalent in the culture. 

The Belizean Johnny Cake is served as a breakfast dish and is similar to a croissant or biscuit which can be built upon to create a complete meal. 

So, whether you prefer sweet or savory dishes, a Johnny Cake can satisfy your needs.

Recipe

  1. Mix all ingredients into bowl
  2. Knead into a big ball of dough 
  3. Separate and roll into 8 golf-sized balls, and place on oiled baking sheet
  4. Let stand for 5-10 minutes 
  5. Flatten the dough balls, and add holes to the top with a fork or toothpick
  6. Preheat oven to 400 degrees 
  7. Bake for 15-20 minutes until golden brown

Ingredients

  • 1 cup flour 
  • 4 tbsp of butter, softened
  • 1 teaspoon baking powder 
  • 1/2 teaspoon salt 
  • 1/2 cup coconut milk
