An Irish Classic — Sausages and Champ

If you are looking to make your next mashed potato dish more flavorful, try topping it with rich gravy and sausage.

Sausages and champ is a traditional Irish recipe, which consists of mashed potatoes mixed with green onions and a fatty Irish butter. This is then topped with Irish sausages and an onion heavy brown gravy and typically served alongside peas or other vegetables.

The recipe is extremely similar to the British dish bangers and mash, but has an Irish twist due to its’ spices and ingredients.

The simple dish makes for a great family dinner as it’s cost efficient and comes together quickly.

Recipe

  1. In a pot over medium high heat, add enough water to fill 3/4 of the pot. Bring to a boil.
  2. Peel your potatoes and chop them up into 1 inch cubes. Add to the boiling water and allow to cook until soft and completely cooked through (you can test this by sticking a fork through the middle of the potato).
  3. Drain and set aside in a bowl.
  4. Finely chop the green onions and set aside.
  5. To the bowl of potatoes, add the green onions, butter and milk. Season to taste with salt and pepper and set aside.
  6. Next, finely slice the onion and set aside. In a pan over medium heat, add oil and butter.
  7. Add the onions, stirring occasionally allowing them to caramelize and get a deep brown color (this will take about 20 minutes). Allow them to cook slowly on low.
  8. When they are ready, add the flour and stir thoroughly making sure to cook the flour completely.
  9. Add the red wine, thyme and mix thoroughly until the liquid has reduced. Add the stock and mix again.
  10. Let this simmer for about 10-15, adding extra broth if needed.
  11. When the gravy is ready, stir in a cold tablespoon of butter. Season with salt and pepper to taste. Set aside.
  12. In a pan over medium heat, add oil and cook your sausage accordingly, making sure to brown both sides and cook through.
  13. Serve the champ with the sausages and top with the gravy.
  14. Enjoy!

Ingredients

For the Champ
  • 2lb potatoes
  • 1 bunch of green onions
  • 1 cup of whole milk
  • 1/4 cup butter, cut into small pieces
  • Salt and pepper, to taste
For the Gravy
  • 2-3 white onions
  • Butter and neutral oil
  • 2 tbsp all-purpose flour
  • 10oz chicken stock, low sodium
  • 1 tsp dried thyme
  • Dash of red wine, dry
  • Irish sausages (bangers)
