One day I had greens like coriander and mint laying around in my fridge and decided to make a salan or curry out of it. I don’t know about you, but I love coriander.
I would describe this meal as fresh and tart. The lemon juice is what brings the citrusy flavors. The tomatoes help bring the juiciness.
Here is how I made this dish!
- Place your pan over high heat. Add 1 tbsp of ginger garlic paste and olive oil to the pan.
- While the oil heats up, cut up 2 tomatoes, 1 red onion, 1 ginger, coriander, mint, and 5 cloves of garlic.
- Add the vegetables to the heated pan.
- As the vegetables sauté, marinate your choice of meat. I used chicken thighs. Marinate the chicken in lemon juice, turmeric, chili powder, minced garlic, and chili flakes.
- Add 1 tbsp of salt, pepper, chili powder, cumin powder, turmeric, garlic powder, ginger powder, onion powder, and basil powder to the sautéed vegetables.
- Add the marinated chicken into the pan and cook on low heat with the lid covered for 30-35 minutes.
- Enjoy and serve!
